  • Basmati Rice: 3 cups
  • Chicken Breasts:
  • Carrot: 1 cup (chopped)
  • Beans: 1 cup (chopped)
  • Green peas: 1 cup
  • Capsicum:1
  • Egg:2
  • Onion:1
  • Garlic:2-3 pods
  • Pepper powder:1/2 tsp
  • Soy sauce: 1 tbsp
  • Spring onion: 1-2
  • Salt: 1 tsp
  • Coriander leaves (optional): to garnish
  • Vinegar (optional): 1 tbsp
  • Vegetable oil: 1tbsp
Cuisine: Cooking time: 40-45 mins Serving: 4-5 people





Initial Preparations:

  • Cook the rice by adding a little salt and keep aside.
  • Cut chicken breasts into medium pieces. Marinate with pepper powder, salt and corn flour for 15-20 minutes.
  • Shallow fry the chicken pieces with a little oil and keep aside.
  • Chop onion, garlic, capsicum and spring onion.
  • Scramble the eggs and set aside.
  • Chop coriander leaves and spring onion.


  1. Heat oil in a pan and add chopped onion.
  2. Add garlic and saute until it turns light brown.
  3. Add chopped beans, carrot, capsicum and cook well by adding a little salt.
  4. Add soy sauce, vinegar and mix well.
  5. Mix it with the fried chicken pieces.
  6. Add cooked rice and stir fry for a few minutes.
  7. Add scrambled eggs and mix well.
  8. Garnish it with coriander leaves and spring onion.
  9. Enjoy it hot with chilly chicken!!!


  • Replace vegetable oil with butter to make it more rich.
  • You may use frozen vegetables as well.
