Ingredients
  • Unsalted Butter: 100g
  • Sugar: 1 cup
  • Sugar (powdered): 1 cup
  • Egg: 1
  • Vanilla Essence: 1/2 tsp
  • All purpose flour: 1 1/2 cup
  • Jam (preferably mixed fruit jam): for filling
Cuisine: Cooking time: 20 mins Serving: 3-4 people

Initial Preparations:

  • Preheat oven in 180 deg C.
  • Grind 1 cup of sugar to get powdered sugar.
  • Keep all the other ingredients ready.

Steps:

  1. In a large bowl, mix well the butter and powdered sugar using a wooden spoon.
  2. Mix egg along with it, no need of using a blender.
  3. Add vanilla essence and mix well.
  4. Add all purpose flour and mix well using hand and make it a dough (similar to chappathy).
  5. Keep it in fridge for 15 minutes.
  6. After 15 minutes, make round balls almost to the size of a small lemon/(nellikka) and soak it in sugar granules. We can make around 18-20 balls with this quantity.
  7. Place these balls over baking paper.
  8. After 5 minutes, take it out and make a small depression on the center with thumb.
  9. Allow it to bake again for 7-8 minutes. By that time the bottom of the cookies have light brown color.
  10. Take the cookies out from the oven and allow it to cool.
  11. Place jam into the depression to make it more tastier.

Tips:

  • Keep enough distance between the balls when you place it on the baking paper, so that it does to expand and glue together.
  • You may have it without jam even.
  • Add jam just before serving.
