Ingredients
  • Fish (Sardines-big): 6 pieces
  • Plantain leaf
For masala
  • Onion: 3 nos.
  • Shallots: 5-6 nos.
  • Ginger: 6-7 pods
  • Garlic: 1 inch piece
  • Tomato: 1 big
  • Green chilly: 2 nos.
  • Red chilly powder: 1.5 tablespoon
  • Turmeric powder: 1/4 tsp
  • Pepper powder: 1/2 tsp
  • Thick coconut milk: 1/2 cup
  • Curry leaves
For frying
  • Red chilly powder: 1 tablespoon
  • Turmeric powder: 1/4 tsp
  • Pepper powder: 1/2 tsp
  • Curry leaves
  • Salt
  • Oil
  • Water

Initial preparations:

  • Clean the fish and keep it aside.
  • Mix the “for frying” ingredients in a bowl along with enough water to make it a smooth paste.
  • Cover the fish with this masala, and keep it in refrigerator for 10-15 minutes.
  • Chop onion, shallots, ginger, garlic, tomato, green chilly in to fine pieces.

Steps:

  1. Heat oil in a pan, preferably coconut oil.
  2. Add some curry leaves, and shallow fry the fish and keep it aside.
  1. Meantime, heat oil in another pan, once heated add chopped ginger and garlic. Add shallots, onion, salt and saute well.
  2. Once it is translucent add green chilly and curry leaves.
  3. Add tomato and mix well, until it is smooth.
  4. Add turmeric powder, chilli powder and pepper and mix well.
  5. Add the prepared coconut milk and make the mix like thick gravy.
  1. Cut the plantain leaves to enough sized pieces to cover the fish.
  2. Pass the leaves over the flame to make it soft and flexible.
  3. Pour little gravy in to the leaves and place the fish on top, again put more gravy on top to cover the fish.
  4. Close the plantain leaves from all the sides, and tie it with the thread from banana leaves.
  5. Pour little oil on a frying pan (1 tsp), and fry the stuff under low flame on both sides. Say 5-6 minutes each side.
  6. Open the plantain leaves just before serving πŸ™‚

Tips:

  • If there is no plantain leaves available cover the fish properly with aluminum foil and cook it in a steamer.
  • You could use Pomfret or Tilapia or King fish instead of Sardine.
