Ingredients
  • Basmati rice: 1.5 cups
  • Ghee: 1 tbsp
  • Onion: 1/2 no.
To marinate
  • Prawns: 20-25 (medium)
  • Ginger - garlic paste: 1/4 tsp
  • Chilly powder: 3/4 - 1 tsp
  • Turmeric powder: 1/4 tsp
  • Pepper powder: 1/2 tsp
  • Onion: 2 (medium)
  • Tomato:1
  • Green chilly: 2-3
  • Ginger: 1/4 tsp
  • Garlic: 1/4 tsp
  • Turmeric powder: 1/4 tsp
  • Chilly powder: 1/4 -1/2
  • Coriander powder: 1 tsp
  • Garam masala: 1/2 tsp
  • Masala: (bay leaves: 1, cloves: 4, peppercorns: 3, cardamom: 3, fennel seeds: 1/4 tsp)
  • Curry leaves
  • Salt
  • Oil
  • Mint leaves: chopped
  • Coriander: chopped
  • Cashew nuts
  • Raisins

Prawns Biriyani

Initial preparations:

  • Wash and clean the basmati rice and soak it for 20-30 minutes.Drain and keep aside.
  • Clean the prawns and marinate it with marination ingredients for about 1 hour.
  • Cut the onions into thin slices.Keep 1/4 of it for frying and garnish.
  • Chop tomato, green chilly, ginger and garlic into small pieces.
  • Fry cashew nuts and raisins in ghee and set aside.
  • Fry the 1/4 portion of chopped onion in ghee and keep aside.

Steps:

  1. Heat up a rice pan, add ghee followed by the the masala mixture.
  2. Add 1/4 portion of sliced onion,  add salt and mix well.
  3. Once onion turns transparent, add 3 cups of water.
  4. Wait for the water to boil, add soaked rice.
  5. Cook the rice until the water evaporates completely. Keep aside.
  6. Meanwhile, shallow fry the prawns for few minutes at medium heat, until it turns slight brown. Drain it on a tissue paper.
  7. Into the same pan, add thinly sliced onion. When it becomes transparent add ginger, garlic and curry leaves.
  8. Add turmeric powder, chilly powder and coriander powder. Mix well for a few seconds.
  9. Add chopped tomatoes and cook until it is well mashed.
  10. Add fried prawns into it, mix well.
  11. Add 1/2 cup of water and mix well.
  12. Allow it to boil and cook for few minutes or until it  form as gravy.
  13. Add chopped coriander and mint leaves.
  14. Slightly roll the biriyani pot with ghee.
  15. Make layers with cooked rice, prawns masala and chopped coriander and mint leaves.
  16. Finally, on the top of it garnish with fried cashew nuts, raisins, fried onions, chopped coriander and mint leaves.
  17. Cover the pot with a tight lid and keep it in a low flame or bake it for few minutes.
  18. Mix well just before serving.
