Ingredients
  • Uzhunnu / Urad Dal: 1 cup
  • Shallots: 7 or 8 nos.
  • Green chilly: 1
  • Ginger: 1 small piece
  • Curry leaves: 1 sprig
  • Whole pepper corns: 1 tsp
  • Salt: as required
  • Oil: for deep frying

Initial Preparations:

  • Soak the urad dal in water for 4-5 hours.
  • Chop shallots, ginger, green chilly and curry leaves into very small pieces.
  • Grind the urad dal into smooth paste without adding water. If necessary, add very little water.
  • Keep some water in another bowl, this is required for making your hand wet in later stage.

Steps:

  1. Add the chopped shallots, ginger, green chilly, curry leaves, salt and whole pepper corns into the ground batter and mix well.
  2. Keep it aside for at least half an hour.
  3. Heat oil in a pan.
  4. Wet your palm in the water that we kept aside, take a small portion of batter and make a round shape.
  5. Make a hole in the middle by using a finger and put it into the hot oil.
  6. Let them cook well in a medium flame until it becomes golden brown on both sides.
  7. Repeat the process for the remaining batter. Don’t forget to wet the hand before making each vada.
  8. Enjoy hot vadas with coconut chutney or tomato chutney or sambar !!!

Tips:

  • Make sure that you prepare the vada in low flame otherwise it wont get cooked inside.
  • Place the prepared vada on a tissue paper to get the oil drained.
  • You may crush the pepper corns if required.
  • This may produce around 15 pieces of vada.
