Ingredients
  • Brinjal(small): 3
  • Tomato: 1 (small)
  • Onion: 2 (medium)
  • Green chilly: 1
  • Turmeric powder: 1/4 tsp
  • Pepper powder: 1/2 - 1 tsp
  • Garam masala: a pinch
  • Salt
  • Curry leaves
  • Dried Chilly: 1
  • Mustard seeds
  • Oil
Cuisine: Cooking time: 15 mins Serving: 2 people

Brinjal Tomato

Initial Preparations:

  • Cut brinjal into lengthy pieces.
  • Slice onion and tomato into fine pieces.

Steps:

  1. Heat oil in a pan, splutter mustard seeds.
  2. Add dried chilly and curry leaves.
  3. Add sliced onions, salt and saute well.
  4. When it becomes light brown, add turmeric powder and mix well.
  5. Add chopped brinjal, mix well with a little water. Cover it with a lid.
  6. Add tomato and saute well.
  7. Add pepper powder and garam masala powder and combine well.
  8. Add some more curry leaves and salt if necessary.
  9. Serve it hot with rice.. πŸ™‚
