Ingredients

  • Marination
  • Kingfish: 500gm (this slices)

  • Turmeric powder: 1/4 tsp

  • Pepper powder: 1 tsp

  • Chilli powder: 2 tsp

  • Fennel seed powder: 1/2 tsp

  • Salt: 1 tsp

  • Lime juice: 1 tsp

  • Rice
  • Basmati rice: 1.5 cup (Biryani or Jeera rice works better)

  • Turmeric powder: a pinch

  • Cardamom: 3-4 nos

  • Cloves: 2-3 nos

  • Cinnamon: 1-2 nos

  • Bay leaves – 1 no

  • Ghee: 1-2 tsp

  • Salt: 1 tsp

  • For the Masala
  • Oil: 1 tbsp

  • Onion: 5 (medium)

  • Tomato: 4 (medium)

  • Ginger garlic paste: 3 tbsp

  • Green chilli: 2-3 nos

  • Garam masala powder: 1 tbsp

  • Turmeric powder: a pinch

  • Coriander powder: 1 tsp

  • Kashmiri Red chilli powder: 2 tsp

  • Garnishing
  • Mint leaves: as required

  • Coriander leaves: as required

  • Cashew nuts: as required

  • Raisins: as required

  • Onion – 1 no.

Directions

  • Preparation
  • Clean the fish and marinate with marination ingredients (turmeric, pepper, red chilli, ginger garlic paste, fennel seed powder, salt, lemon juice) and keep aside for at least an hour.
  • Finely chop onion, tomato, and green chillies.
  • Prepare the ginger garlic paste
  • Wash the rice and keep it soaked in water.
  • Prepare the rice
  • Heat the ghee in a vessel, add turmeric powder, cardamom, clove and cinnamon, saute well. Add the soaked rice
  • Add the soaked rice along with 3 cups of water. Add salt.
  • Close the vessel and cook the rice in low flame until the water dries out.
  • Prepare the garnishing stuff, fry the cashew nuts, raisins, and onion one by one. Chop the Coriander and mint leaves.
  • Masala preparation
  • Shallow fry the fish in oil, keep it aside once done.
  • To the same pan, add ginger garlic paste saute well.
  • Add chopped onion and chillies and fry till golden brown.
  • Add chopped tomato and mix well.
  • Reduce flame, add turmeric , coriander, Kashmiri chilli powder and salt cook until the masala is well mixed.
  • Add in the fried fish and cover the fish with the masala. Close the pan and cook for another 7-8 minute in low flame.
  • Final preparations
  • In a serving bowl, make a layer of rice and place the masala with fish on top. Make multiple layers of rice and the fish masala. Garnish with the fried garnishing ingredients in between and on the top.
